We are seeking a dedicated Commis Chef to join our Chinese cuisine team, specializing in the preparation of the iconic Peking Duck. This role offers the opportunity to learn traditional techniques under the guidance of senior chefs, while contributing to the delivery of one of the most celebrated dishes in fine dining.
Key Responsibilities
Ingredient preparation: Clean, trim, and prepare ducks for marination and roasting.
Marination process: Assist in applying traditional marinades, seasonings, and air-drying techniques.
Roasting support: Operate roasting ovens under supervision, ensuring crisp skin and tender meat.
Mise en place: Prepare accompaniments such as pancakes, scallions, cucumber, and sauces.
Presentation assistance: Support carving and plating of duck for service.
Hygiene compliance: Maintain cleanliness of prep and roasting areas, adhering to HACCP standards.
Stock monitoring: Track duck inventory, sauces, and accompaniments, reporting shortages promptly.
Skills & Competencies
Knowledge of Chinese roasting techniques and traditional Peking Duck preparation.
Ability to follow precise recipes and instructions.
Strong attention to detail and patience for multi-step processes.
Teamwork and communication skills to support senior chefs.
Basic understanding of food safety and hygiene practices.
Qualifications
Diploma or certification in Culinary Arts preferred.
